The Satisfying Taste of Taşkale: Yahnili Pilav
Made with lamb, chickpeas and rice and flavored with local spices, pilav with yahn is one of the most beloved and satisfying flavors of Taşkale cuisine. This pilav, thought to be as old as the history of the village, continues to be indispensable for guests and special occasions.
History of Yahnili Pilav in Taşkale:
Although it is not known exactly when Yahnili Pilav has been made in Taşkale, it is estimated to be as old as the history of the village. It is known that this delicious pilav was often consumed as lunch by villagers working in the fields in the past and was indispensable for special occasions. Today, it continues to be one of the flavors that visitors to Taşkale definitely try and like.
Ingredients:
·500 gr lamb (diced)
·2 onions (chopped)
·2 peppers (chopped)
·2 tomatoes (grated)
·1 cup chickpeas (boiled)
·2 cups rice
·4 cups water
·Salt, black pepper, cumin, chili pepper
·Parsley and dill (for serving)
·Cooking Time: 1 hour and 15 minutes
Preparation:
Fry the Meat: Put the lamb meat in the pot and cook until it absorbs its water. Add the onion and pepper and cook.
Add Spices and Tomatoes: Add grated tomato, spices and chickpeas and mix.
Add Rice and Water: Add rice and water and boil.
Cook: Reduce the heat and cook the rice on low heat until it is cooked.
Serve: Garnish with parsley and dill and serve hot.
Tips:
·The most delicious lamb meat for stew is the one with fat and bones.
·Boiling the chickpeas in advance shortens the cooking time of the pilav.
·We recommend that you grind the spices fresh for a more delicious pilav.
